Vegan avocado toast variations

If there’s one thing I’ll never get tired of, it’s vegan avocado toast. Call it basic, call it cliché, call it “that thing every millennial supposedly spends their house deposit on”—I don’t care. It’s delicious, it’s easy, and it somehow makes you feel like your life is just a little bit more put-together than it actually is. And the best part? You can switch it up in about a million ways, so you never get bored. Let’s talk about some variations that go way beyond just smashing an avocado on bread and hoping for the best.

One of my go-to versions is the “protein-boosted” setup. I mash my avocado with a squeeze of lemon, black pepper, and a tiny pinch of salt, then pile on some crispy chickpeas. It hits that crunchy–creamy balance that makes you feel like you’re eating something fancy, even though it took five minutes and zero effort. Sometimes I add a drizzle of tahini on top, because I like to pretend I’m the kind of person who eats brunch at a trendy café instead of over my kitchen sink. No shame.

Then there’s the spicy version—perfect for days when you need a little kick to wake your soul up. I’m talking smashed avocado mixed with chili flakes, lime juice, and a bit of garlic, then topped with sliced cherry tomatoes and a splash of hot sauce. If you want to feel extra bold, throw on some pickled onions. Suddenly your breakfast has attitude. It’s the avocado toast equivalent of putting on sunglasses and pretending you’re the main character.

If you’re feeling wholesome—and maybe just a little smug—you can go for the “green goddess” toast. This one’s basically a mini salad on bread: avocado, cucumber ribbons, fresh herbs like basil or dill, and a sprinkle of hemp seeds. It’s refreshing, crunchy, and gives off major “I drink green smoothies and journal every morning” energy, even if the reality is… not quite that aesthetic.

And of course, we can’t forget the sweet-ish variation. Yes, sweet avocado toast sounds weird, but trust me. A swipe of almond butter under the avocado, a drizzle of maple syrup, and some crushed walnuts on top is surprisingly incredible. It tastes like a snack you’d have on a cozy Sunday morning when you want something comforting without going full dessert-for-breakfast mode.

At the end of the day, avocado toast is basically a blank canvas. Whether you’re craving something spicy, crunchy, wholesome, or unexpectedly sweet, it just works. And the best part is that you can make it as extra—or as lazy—as you want. Honestly, that’s the kind of commitment level most of us can vibe with.
